1 cup fresh basil leaves, packed

1/4 cup pine nuts (or walnuts for a twist)

2 cloves garlic, peeled

1/2 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

Salt and pepper, to taste

2 store-bought or homemade flatbreads (naan or pita work well)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved (or shredded mozzarella)

Balsamic glaze, for drizzling

Fresh basil leaves, for garnish

Instructions
 

Make the Pesto: In a food processor, combine the basil leaves, pine nuts, and garlic. Pulse a few times until chopped. Add the grated Parmesan cheese and pulse until combined. With the processor running, slowly drizzle in the olive oil until the pesto is smooth. Season with salt and pepper to taste.

    Preheat Oven: Preheat your oven to 400°F (200°C).

      Prepare the Flatbread: Place the flatbreads on a baking sheet. Spread a generous amount of the homemade pesto evenly over each flatbread, leaving a small border at the edges.

        Add Toppings: Scatter the halved cherry tomatoes and mozzarella balls over the pesto layer.
