Classic Chicken Pot Pie Casserole

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 cup frozen peas

2 cups cooked chicken, shredded or diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup all-purpose flour

2 cups chicken broth

1 cup heavy cream

1/2 teaspoon Worcestershire sauce

1 pre-made pie crust or biscuit dough

1 egg (for egg wash)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.

      Stir in garlic, carrots, and celery. Cook for another 5-7 minutes until the vegetables are softened.

        Add the frozen peas and cooked chicken to the skillet. Sprinkle in the thyme, rosemary, salt, and black pepper. Stir to combine.

          Sprinkle the flour over the mixture and stir well to coat the ingredients. Cook for about 2 minutes to eliminate the raw flour taste.

            Gradually pour in the chicken broth while stirring constantly, followed by the heavy cream and Worcestershire sauce. Cook until the mixture thickens, about 5-7 minutes, stirring occasionally.

              Remove the skillet from heat and transfer the chicken mixture into a greased 9x13 casserole dish, spreading it out evenly.

                Unroll the pie crust or biscuit dough and lay it over the chicken mixture, tucking the edges down into the sides of the dish. Cut a few slits in the top for steam to escape.

                  In a small bowl, beat the egg and brush it over the crust for a golden finish.

                    Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and bubbling.

                      Remove from the oven and let it cool for 10 minutes before serving.
