For the Beef Filling:

1 lb ground beef (80% lean)

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp taco seasoning (store-bought or homemade)

1 cup beef broth

Salt and pepper to taste

1 tbsp olive oil

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1 avocado, sliced

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Jalapeño slices (optional)

Instructions
 

Cook the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.

      - Add in the minced garlic and cook for another minute until fragrant.

        - Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, for about 5-7 minutes.

          - Drain excess fat if necessary, then stir in the taco seasoning, beef broth, and a pinch of salt and pepper. Bring to a simmer, reduce the heat, and let it cook for about 10 minutes until the mixture thickens.

            Prepare the Toppings:

              - While the beef is cooking, prepare your taco toppings. Chop the lettuce, tomatoes, and cilantro, and slice the avocado. Set aside.

                Warm the Tortillas:

                  - Heat a dry skillet or comal over medium heat. Carefully warm each tortilla for about 30 seconds on each side until they are pliable and slightly toasted.

                    Assemble Your Tacos:

                      - To assemble, place a few spoonfuls of the beef mixture onto each tortilla and top with lettuce, diced tomatoes, cheddar cheese, and avocado slices.
