Cinnamon Sugar Pretzel Bites

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

2 tbsp granulated sugar

4 cups all-purpose flour

1 tsp salt

½ cup baking soda (for boiling)

½ cup unsalted butter, melted

½ cup granulated sugar (for coating)

2 tsp ground cinnamon

Activate the Yeast: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for about 5-10 minutes, or until it becomes frothy.

    Make the Dough: Add flour and salt to the yeast mixture. Mix with a wooden spoon until it starts to come together, then transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

      Let it Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it doubles in size.

        Preheat the Oven: While the dough is rising, preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

          Shape the Pretzel Bites: Once the dough has risen, punch it down and divide it into small sections (each about 1 inch in size). Roll each piece into a rope about 6 inches long, then cut into bite-sized pieces.

            Boil the Bites: In a large pot, bring about 8 cups of water to a gentle boil and stir in the baking soda. Carefully drop the pretzel bites into the boiling water, cooking them for about 30 seconds on each side. Remove them with a slotted spoon and set them on a clean towel to drain.
