Ingredients

For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup buttermilk

2 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon salt

For the Cinnamon Streusel Topping:

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1 tablespoon ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup chopped walnuts (optional)

For the Glaze (optional):

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined; avoid overmixing to ensure a tender cake.

Prepare the Streusel Topping: In a medium bowl, combine flour, brown sugar, and ground cinnamon. Pour in the melted butter and mix until crumbly. If using, add the chopped walnuts for an extra crunch.

Assemble the Cake: Pour half of the cake batter into the prepared baking pan, spreading it out evenly. Sprinkle half of the streusel topping over the batter. Pour the remaining batter on top and finish with the last of the streusel topping.

Bake the Cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it toward the end of the baking time to avoid over-baking.

Make the Glaze (Optional): While the cake is cooling, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

Cool and Glaze: Allow the coffee cake to cool in the pan for about 10-15 minutes before transferring it to a wire rack. Once cooled, drizzle the glaze over the top if desired.

Serve: Cut the cake into squares and enjoy warm with a cup of coffee or your favorite tea.
