Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lime juice (about 2 limes)

1/4 cup fresh cilantro, chopped (plus extra for garnish)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a medium-sized mixing bowl, combine the fresh lime juice, chopped cilantro, olive oil, minced garlic, ground cumin, chili powder, salt, and black pepper. Whisk until well combined.

Marinate the Chicken: Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2-4 hours for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, make sure the coals are glowing red and covered with gray ash.

Grill the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the marinade. Place the chicken breasts on the hot grill. Cook for about 6-7 minutes on one side, then flip and grill for an additional 6-7 minutes on the other side, or until the internal temperature reaches 165°F.

Rest the Chicken: Once fully cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist.

Serve: Slice the chicken breasts and garnish with additional chopped cilantro and lime wedges. Serve with your favorite sides, such as grilled vegetables, rice, or a fresh salad.
