Ingredients

1 cup heavy whipping cream

1 cup dark chocolate (at least 70% cocoa), chopped

3 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

Pinch of salt

1/2 cup crushed cookies (like Oreos or digestive biscuits)

Fresh berries (strawberries, raspberries, or blueberries) for garnish

Mint leaves for garnish (optional)

Instructions

Melt the Chocolate: In a double boiler, gently melt the chopped dark chocolate over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.

Whip the Cream: In a large bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

Prepare Egg Mixture: In another bowl, beat the egg yolks with the granulated sugar until the mixture is pale and creamy. Stir in the vanilla extract.

Combine Chocolate and Egg Yolks: Gradually fold the melted chocolate into the egg yolk mixture until well combined.

Beat Egg Whites: In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

Combine Mixtures: Gently fold the whipped cream into the chocolate mixture, followed by the beaten egg whites, making sure to retain as much volume as possible.

Assemble the Parfaits: In serving glasses or bowls, start with a layer of crushed cookies, followed by a generous layer of chocolate mousse. Repeat the layering until the glasses are filled, finishing with mousse on top.

Chill and Set: Place the assembled parfaits in the refrigerator for at least 2 hours to set.

Garnish and Serve: Just before serving, top with fresh berries and mint leaves for a pop of color and freshness. Enjoy your delightful chocolate mousse parfaits!
