Chocolate Chip Zucchini Muffins

1 medium zucchini (about 1 cup, grated)

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/3 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (plus extra for topping)

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Prep the Zucchini: Start by grating the zucchini using a box grater. After grating, place the zucchini in a clean kitchen towel and twist to squeeze out excess moisture. This will keep your muffins from becoming too soggy.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg until evenly mixed.

      Mix Sugars and Wet Ingredients: In another bowl, beat together the granulated sugar, brown sugar, and oil until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Do not overmix. Fold in the grated zucchini, chocolate chips, and nuts (if using) until evenly distributed.

          Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or lightly grease the cups.

            Fill Muffin Cups: Scoop the batter into the prepared muffin tins, filling each cup about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin for a delightful look.

              Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
