So, what exactly is a skillet cookie? Unlike traditional cookies that are baked individually on a cookie sheet, a skillet cookie is a thick, chewy cookie baked in a cast-iron skillet or oven-safe pan. This method results in a unique texture that combines the soft, gooey center of a cookie with a slightly crisp outer edge, creating an irresistible contrast in every bite.

Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups semi-sweet chocolate chips

Optional: 1/2 cup chopped nuts (walnuts or pecans)

Vanilla ice cream (for serving)

Instructions

Preheat your oven to 350°F (175°C). Grease a 10-inch cast iron skillet or oven-safe skillet with cooking spray or a little butter.

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully incorporated.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

Fold in the chocolate chips and nuts (if using) until evenly distributed throughout the dough.

Spread the cookie dough evenly in the prepared skillet, smoothing the top with a spatula.

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center looks slightly puffed. A toothpick inserted in the center should come out with a few moist crumbs (not wet).

Remove from the oven and allow the skillet to cool slightly for about 10 minutes.

Serve warm by scooping pieces directly from the skillet. Top with a generous scoop of vanilla ice cream for an extra indulgent treat!
