For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake layer:

16 oz (450g) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

½ cup mini chocolate chips + extra for garnish

For the topping:

¼ cup mini chocolate chips (for sprinkling on top)

Whipped cream (optional, for serving)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until all the crumbs are moistened. Press this mixture firmly into the bottom of a greased 9x13 inch baking pan to form an even layer.

    Bake the crust: Place the pan in the preheated oven and bake for 10 minutes. Remove and let cool slightly while you prepare the cheesecake layer.

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy with an electric mixer. Gradually add the sugar and continue beating until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until the mixture is smooth and creamy.

        Add chocolate chips: Gently fold in the ½ cup of mini chocolate chips into the cheesecake batter.

          Assemble the bars: Pour the cheesecake mixture over the prepared crust and spread it evenly. Sprinkle the remaining ¼ cup of mini chocolate chips over the top.

            Bake the cheesecake bars: Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly (it will firm up as it cools).

              Cool and chill: Once done, remove from the oven and let it cool at room temperature for about 30 minutes. Transfer the pan to the refrigerator and chill for at least 4 hours, or overnight for best results.

                Slice and serve: After chilling, lift the cheesecake from the pan using the edges of the parchment paper (if used). Slice into bars and serve with a dollop of whipped cream if desired. Enjoy!
