Ingredients

1 cup rolled oats

1/2 cup almond butter

1/4 cup honey or maple syrup

1/3 cup cocoa powder

1/4 cup shredded coconut (unsweetened)

1/2 cup almond slivers or chopped almonds

1/4 cup mini dark chocolate chips

1 teaspoon vanilla extract

A pinch of sea salt

Instructions

Combine the Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, shredded coconut, and a pinch of sea salt. Mix well until evenly distributed.

Mix the Wet Ingredients: In a separate bowl, stir together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well-blended.

Combine Dry and Wet Ingredients: Pour the wet mixture into the dry ingredients. Stir with a spatula or your hands until everything is thoroughly combined. The mixture should be sticky but manageable.

Add Nuts and Chocolate: Gently fold in the almond slivers and mini dark chocolate chips, ensuring they are evenly incorporated into the mixture.

Form the Energy Balls: Once the mixture is well combined, use your hands to shape it into small balls, about 1 inch in diameter. If the mixture feels too wet, let it sit for a few minutes to absorb moisture before shaping.

Chill the Energy Balls: Place the formed energy balls on a parchment-lined baking sheet or plate, and refrigerate them for at least 30 minutes to firm up.

Store and Enjoy: Once chilled, they can be enjoyed immediately or stored in an airtight container in the refrigerator for up to a week.

Prep Time: 10 minutes | Total Time: 40 minutes | Servings: About 12-15 energy balls
