Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1 tsp vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped walnuts (optional)

1/2 tsp cinnamon

1/4 tsp salt

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving an overhang for easy removal.

Combine Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly with a fork or food processor until smooth. Add almond butter, honey (or maple syrup), and vanilla extract. Mix well until combined.

Mix Dry Ingredients: In a separate bowl, combine rolled oats, cinnamon, and salt. Stir to combine.

Combine Mixtures: Gradually add the dry mixture to the wet banana mixture. Stir until just combined. Fold in dark chocolate chips and chopped walnuts if using.

Spread Batter: Pour the mixture into the prepared baking dish and spread it evenly using a spatula. Smooth out the top for even baking.

Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the edges are golden brown and the center feels firm to the touch.

Cool: Remove from the oven and allow to cool in the pan for about 10 minutes. Use the parchment overhang to lift the bars out and place on a wire rack to cool completely.

Slice and Serve: Once cooled, cut into squares or bars. Serve immediately or store in an airtight container in the refrigerator for up to one week.
