Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts

1/4 cup olive oil

3 tablespoons chipotle sauce (canned or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Chipotle Ranch Sauce:

1/2 cup ranch dressing

2 tablespoons mayonnaise

1 tablespoon chipotle sauce (adjust to taste)

1 tablespoon lime juice

Fresh cilantro, chopped (optional)

For the Burrito:

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup shredded cheese (Cheddar or Monterey Jack)

1 cup fresh pico de gallo or diced tomatoes

1 ripe avocado, sliced

Lime wedges for serving

Instructions

Marinate the Chicken:

    - In a bowl, mix together olive oil, chipotle sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.

      - Add the chicken breasts to the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

        Make the Chipotle Ranch Sauce:

          - In a small bowl, combine ranch dressing, mayonnaise, chipotle sauce, and lime juice. Whisk until smooth and well combined. Adjust chipotle sauce according to your spice preference. Add chopped cilantro if desired. Set aside.

            Grill the Chicken:

              - Preheat a grill or grill pan over medium-high heat. Remove the chicken breasts from the marinade and place them on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing into strips.

                Assemble the Burritos:

                  - On a large flour tortilla, layer 1/4 of the rice, followed by 1/4 of the black beans, sliced grilled chicken, shredded cheese, pico de gallo, and avocado.

                    - Drizzle generously with the chipotle ranch sauce.

                      Wrap the Burritos:

                        - Fold in the sides of the tortilla, then roll from the bottom up tightly to seal. Repeat for the remaining tortillas.

                          Optional - Grill the Burritos:

                            - If you like a crispy outer layer, return the burritos to the grill for an additional 1-2 minutes on each side, until golden brown.

                              Serve:

                                - Slice the burritos in half, serve with lime wedges on the side, and enjoy your flavorful Chipotle Ranch Grilled Chicken Burrito!
