2 cups plain Greek yogurt

1 cup cucumber, finely diced

1 cup ripe tomatoes, peeled and diced

1/2 cup red bell pepper, finely chopped

1/4 cup red onion, finely chopped

2 cloves garlic, minced

2 tablespoons fresh dill, chopped

1 tablespoon olive oil

2 cups vegetable or chicken broth, chilled

2 tablespoons fresh lemon juice

Salt and pepper, to taste

Optional garnish: croutons, fresh herbs, or a drizzle of olive oil

Instructions
 

Prepare the Vegetables: In a medium mixing bowl, combine the diced cucumber, tomatoes, red bell pepper, and red onion. Add the minced garlic and fresh dill, stirring to combine. Set aside to let the flavors meld.
