Ingredients

2 medium cucumbers, peeled and chopped

1 ripe avocado, pitted and flesh scooped out

1 cup Greek yogurt (or dairy-free yogurt for a vegan option)

1 cup vegetable broth, chilled

1 tablespoon fresh lemon juice

1 clove garlic, minced

1/4 teaspoon ground cumin

Salt and pepper to taste

Fresh dill or mint leaves for garnish

Optional: a drizzle of olive oil for serving

Instructions

Prepare the Vegetables: In a blender, combine the chopped cucumbers, avocado flesh, Greek yogurt, and chilled vegetable broth.

Flavor It Up: Add the fresh lemon juice, minced garlic, ground cumin, and season with salt and pepper.

Blend Until Smooth: Blend the mixture on high speed for about 1-2 minutes or until it becomes creamy and smooth. You can add more broth if you desire a thinner consistency.

Chill the Soup: Transfer the blended soup into a bowl or container and cover. Refrigerate for at least 30 minutes to allow the flavors to meld and the soup to chill.

Serve: Ladle the chilled soup into bowls. Garnish with fresh dill or mint leaves and drizzle with olive oil if desired. Enjoy with crusty bread or crispy crackers!
