1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juice)

1 can (8 oz) tomato sauce

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

For the Mac and Cheese:

2 cups elbow macaroni

2 cups shredded sharp cheddar cheese

2 cups milk

2 tbsp butter

2 tbsp all-purpose flour

1/2 tsp garlic powder

Salt to taste

For the Waffle Fries:

1 bag (16 oz) frozen waffle fries

Cooking oil (if needed for frying)

Toppings (Optional):

Chopped green onions

Sour cream

Sliced jalapeños

Shredded cheese

Instructions
 

Prepare the Waffle Fries:

    - Preheat your oven according to the package instructions for the waffle fries. Bake or fry the fries until they are golden and crispy. Set aside.

      Cook the Chili:

        - In a large skillet over medium heat, brown the ground beef or turkey. Drain any excess fat.

          - Add in the diced onion and garlic, cooking until the onion is translucent (about 3-4 minutes).

            - Stir in the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, salt, and pepper. Let simmer for about 15-20 minutes, stirring occasionally.

              Make the Mac and Cheese:

                - In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly.

                  - Gradually add the milk while whisking to prevent lumps. Continue to stir until the mixture thickens (about 5-7 minutes).

                    - Add the garlic powder and salt to taste, then mix in the shredded cheddar cheese until melted and creamy.

                      - Cook the elbow macaroni according to package directions, then drain and mix into the cheese sauce.

                        Combine Everything in the Skillet:

                          - In the skillet with the chili, gently fold the mac and cheese into the chili until well combined. Cook for an additional 3-5 minutes until heated through.

                            Assemble the Dish:

                              - In a large serving dish or individual bowls, layer the waffle fries on the bottom.

                                - Spoon the chili mac mixture over the waffle fries.

                                  Add Toppings:

                                    - Top with chopped green onions, a dollop of sour cream, sliced jalapeños, or extra cheese if desired.
