2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

Juice of 2 limes

1 tablespoon honey

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup corn (fresh or canned)

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Lime wedges for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chili powder, cumin, salt, pepper, and juice of 1 lime. Add the chicken breasts, ensuring they are well coated. Cover and let marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, discarding the excess. Grill or sear the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F/75°C). Once done, remove from heat, let it rest for 5 minutes, then slice into strips.

      Prepare the Dressing: In a small bowl, whisk together the juice of the remaining lime, honey, salt, and pepper. Adjust sweetness or acidity to taste.
