Chicken & Spinach Stuffed Shells

12-15 large pasta shells

1 cup cooked chicken, shredded or diced

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

1 large egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to the package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Take a cooked pasta shell and generously fill it with the chicken and spinach mixture. Repeat until all shells are filled.

          Prepare the Baking Dish: Spread a layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells open side up in the dish. Pour the remaining marinara sauce over the stuffed shells.

            Add Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the shells.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove from oven, let it cool for a few minutes, and garnish with fresh basil if desired. Serve warm!
