8 ounces spaghetti

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14 ounces) diced tomatoes with green chilies

1 cup chicken broth

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, seasoning with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove chicken from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Create the Sauce: Stir in the diced tomatoes with green chilies, chicken broth, Italian seasoning, and paprika. Bring the mixture to a simmer. Allow to cook for about 5 minutes to let the flavors meld together.

          Add Cream and Chicken: Reduce the heat to low, then stir in the heavy cream until well combined. Add the cooked chicken back into the skillet and mix everything together.

            Cheesy Goodness: Gradually mix in 1 cup of the shredded mozzarella cheese and the Parmesan cheese, stirring until melted and creamy. If the sauce is too thick, add a splash more chicken broth to reach desired consistency.
