2 cups cooked chicken, shredded (can use rotisserie chicken for convenience)

1/2 cup plain Greek yogurt (or mayonnaise for a creamier texture)

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup sweet dried cranberries

1/4 cup chopped pecans (or walnuts)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

2 cans (8 oz each) refrigerated crescent roll dough

Fresh green lettuce leaves for serving (optional)

Instructions
 

Prepare the Chicken Salad:
