Chicken & Hummus Veggie Wraps

2 large whole wheat tortillas

1 cup cooked chicken breast, shredded

1/2 cup hummus (store-bought or homemade)

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/4 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1 tablespoon olive oil

Salt and pepper to taste

Optional: Feta cheese or crumbled goat cheese for topping

Instructions
 

Prepare the Chicken: If you haven't already, cook the chicken breast by boiling, grilling, or pan-searing until cooked through. Allow to cool, then shred into bite-sized pieces.

    Prepare the Tortillas: Warm the whole wheat tortillas in a skillet over medium heat for about 30 seconds on each side, until soft and pliable. This will make them easier to roll.

      Spread the Hummus: Take one tortilla and spread half of the hummus evenly on the entire surface, leaving a little space around the edges to prevent spillage.

        Add the Chicken: Sprinkle half of the shredded chicken over the hummus, distributing it evenly.

          Layer the Veggies: Top the chicken with fresh spinach leaves, sliced cherry tomatoes, cucumber, red bell pepper, and red onion. Drizzle with olive oil, and add salt and pepper to taste.

            Add Cheese (Optional): If desired, sprinkle feta cheese or crumbled goat cheese over the veggies for an added layer of flavor.

              Wrap It Up: Starting from one end, roll the tortilla tightly over the fillings, tucking in the sides as you go to keep the ingredients inside. Repeat with the second tortilla.
