Chicken Chimichangas

2 cups cooked, shredded chicken (rotisserie chicken works well)

1 cup refried beans

1 cup shredded cheese (cheddar or a Mexican blend)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

4 large flour tortillas

Vegetable oil (for frying)

Fresh cilantro (for garnish)

Sour cream (for serving)

Salsa (for serving)

Avocado slices (optional, for serving)

Instructions
 

Prepare the Filling: In a large skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Mix the Chicken Filling: In a large bowl, combine the shredded chicken, refried beans, sautéed onion and garlic, cheese, cumin, chili powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.

      Assemble the Chimichangas: Take a flour tortilla and place about ½ cup of the chicken filling in the center. Fold up the bottom of the tortilla over the filling, then fold in the sides, and roll tightly to enclose the filling. Repeat with all tortillas.

        Prepare for Frying: In a deep skillet or heavy-bottomed pan, heat about 2 inches of vegetable oil to 350°F (175°C).

          Fry the Chimichangas: Carefully place one or two chimichangas seam-side down into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use tongs to flip them gently.

            Drain and Cool: Remove the fried chimichangas and place them on a plate lined with paper towels to drain any excess oil.

              Serve: Garnish with fresh cilantro and serve with sour cream, salsa, and avocado slices on the side.
