1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups cooked pasta (penne or rigatoni work great)

1 cup cream cheese, softened

1 cup shredded provolone cheese

1 cup shredded mozzarella cheese

1/2 cup chicken broth

1/4 cup mayonnaise

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish and set aside.

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken, season with salt, pepper, and Italian seasoning, and cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside.

      Sauté Vegetables: In the same skillet, add the sliced onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until tender. Stir in the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large bowl, mix the cooked pasta, sautéed vegetables, cooked chicken, softened cream cheese, chicken broth, and mayonnaise until everything is evenly combined.

          Cheese it Up: Gently fold in the provolone and mozzarella cheese, reserving a bit of each for topping the casserole. Check for seasoning and adjust with more salt and pepper if needed.
