1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups rolled oats

1 cup raisins

1/2 cup chopped walnuts (optional)

A pinch of nutmeg (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    Cream the Butter and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, ground cinnamon, and nutmeg (if using). Gradually add this dry mixture to the wet ingredients, mixing just until incorporated.

          Fold in Oats and Add-ins: Gently fold in the rolled oats, raisins, and chopped walnuts (if using). Be sure to combine everything evenly without overmixing.
