Cherry Amaretto Tiramisu

2 cups fresh cherries, pitted and halved

1/2 cup granulated sugar, divided

1 cup strong brewed coffee, cooled

1/2 cup Amaretto liqueur

8 oz mascarpone cheese, at room temperature

1 cup heavy cream

1 teaspoon vanilla extract

24 ladyfinger cookies

2 tablespoons cocoa powder, for dusting

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Cherry Compote: In a medium saucepan over medium heat, combine the pitted cherries and 1/4 cup of granulated sugar. Cook for about 5-7 minutes, stirring occasionally, until the cherries are soft and their juices have started to thicken. Remove from heat and let it cool to room temperature.

    Mix the Coffee and Amaretto: In a shallow bowl, combine the cooled brewed coffee with the Amaretto liqueur. Set aside.

      Make the Mascarpone Mixture: In a large mixing bowl, add the mascarpone cheese, remaining 1/4 cup granulated sugar, and vanilla extract. Using an electric mixer, beat until smooth and creamy.

        Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.

          Assemble the Tiramisu: Quickly dip each ladyfinger into the coffee-Amaretto mixture, ensuring they are soaked but not soggy. Line the bottom of an 8x8 inch dish with half of the soaked ladyfingers. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry compote.

            Layer Again: Repeat the process with the remaining ladyfingers, mascarpone mixture, and cherry compote, ending with the mascarpone mixture on top.

              Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together.

                Serve: Before serving, dust the top with cocoa powder. Garnish with fresh mint leaves, if desired. Slice and serve chilled.
