4 medium zucchinis, grated

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1 cup breadcrumbs (panko for extra crunch)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: In a colander, sprinkle the grated zucchini with salt and let it sit for about 10-15 minutes. This will help draw out excess moisture. Afterward, squeeze the zucchini in a clean kitchen towel to remove as much moisture as possible.

      Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, eggs, garlic powder, onion powder, black pepper, salt, oregano, and basil. Stir in the squeezed zucchini until evenly combined.

        Layer the Casserole: Lightly grease a baking dish (approximately 9x13 inches) with olive oil. Spread the zucchini-cheese mixture evenly across the bottom.

          Add Toppings: In a separate bowl, mix the remaining breadcrumbs with the remaining mozzarella and Parmesan cheeses. Sprinkle this mixture evenly over the zucchini layer.

            Bake the Casserole: Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the cheese is bubbly.

              Let It Rest: Once done, remove from the oven and let it cool for about 5-10 minutes before serving. This helps the casserole set a bit more.

                Garnish and Serve: Before serving, sprinkle fresh chopped parsley over the top for a pop of color.
