Ingredients

1 cup long-grain rice

2 cups vegetable or chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook until fragrant, about 1 minute.

Toast Rice: Add the rice to the skillet and stir to combine. Toast the rice in the oil for about 2-3 minutes, allowing it to absorb the flavors.

Add Liquids: Pour in the vegetable or chicken broth, the undrained diced tomatoes, dried basil, and oregano. Stir well to combine and bring the mixture to a gentle boil.

Simmer: Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is mostly absorbed.

Cheesy Finish: Once the rice is cooked, remove the skillet from the heat and stir in the mozzarella and Parmesan cheese. Mix until the cheese is melted and well incorporated.

Season & Serve: Taste and season with salt and pepper as desired. Garnish with fresh basil leaves before serving.

Enjoy: Serve hot and enjoy this cheesy, comforting dish as a satisfying main course or a side!
