Ingredients

2 medium sweet potatoes (about 1 pound), peeled and cubed

1 cup shredded sharp cheddar cheese

1 cup all-purpose flour

1/2 cup cornmeal

2 eggs

1/2 cup milk (dairy or plant-based)

1 tsp baking powder

1/2 tsp garlic powder

Salt and pepper, to taste

1/2 tsp paprika

Olive oil or cooking spray, for the waffle iron

Optional fillings: sliced avocado, crispy bacon, or sautéed spinach

Instructions

Cook the Sweet Potatoes: In a medium pot, bring water to a boil and add the sweet potato cubes. Cook until fork-tender, about 15 minutes. Drain and mash until smooth. Allow to cool slightly.

Make the Batter: In a large mixing bowl, combine the mashed sweet potatoes, flour, cornmeal, cheese, eggs, milk, baking powder, garlic powder, paprika, salt, and pepper. Mix until a thick batter forms.

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with olive oil or cooking spray to prevent sticking.

Cook the Waffles: Pour about 1/2 cup of the sweet potato batter into the preheated waffle iron, spreading it evenly. Close the lid and cook according to the manufacturer's directions, usually around 5-7 minutes, until golden brown and crispy. Repeat with the remaining batter.

Assemble the Sandwiches: Once the waffles are cooked, take one waffle as the base and layer on your desired fillings (e.g., sliced avocado, crispy bacon, sautéed spinach). Top with a second waffle to complete the sandwich.

Serve: Slice the sandwiches in half and serve warm. Enjoy the contrast of cheesy, sweet, and savory flavors!
