8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup pimiento cheese spread

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

3 cups whole milk

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for a kick)

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons Parmesan cheese, grated (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, stirring constantly for about 1-2 minutes until golden and fragrant.

      Add Milk: Gradually pour in the whole milk while continuously whisking to prevent lumps. Continue to cook until the mixture thickens, around 5-7 minutes.

        Incorporate Cream Cheese & Spices: Lower the heat and stir in the softened cream cheese until it melts completely. Then, add the garlic powder, onion powder, paprika, cayenne pepper (if using), and season with salt and pepper to taste.

          Add Cheeses: Gradually mix in the shredded sharp cheddar cheese and pimiento cheese spread, stirring continuously until all the cheese has melted and the sauce is smooth and creamy.

            Combine Pasta and Sauce: Fold the cooked elbow macaroni into the cheese sauce, ensuring every piece of pasta is generously coated with the creamy mixture.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.
