Ingredients

4 large ripe peaches, sliced

1 cup fresh ricotta cheese

1 cup shredded sharp cheddar cheese

1/4 cup cream cheese, softened

1/2 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup crushed buttery crackers (e.g., Ritz crackers)

1/4 cup melted butter

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Peaches: In a large mixing bowl, combine the sliced peaches with half of the brown sugar (1/4 cup) and the vanilla extract. Let it sit for about 10 minutes to allow the flavors to meld while you prepare the cheese mixture.

Make the Cheese Mixture: In another bowl, mix together the ricotta cheese, cream cheese, shredded cheddar cheese, remaining brown sugar, cinnamon, and nutmeg until smooth and well blended.

Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the sweetened peaches evenly across the bottom. Spoon half of the cheese mixture over the peaches. Repeat the layers with the remaining peaches and cheese mixture.

Make the Crust: In a separate bowl, mix the crushed buttery crackers with melted butter until the crumbs are evenly coated. Sprinkle this mixture generously over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and the cracker topping is golden brown.

Serve: Remove from the oven and let it rest for about 5-10 minutes before slicing. Garnish with fresh basil leaves if desired, and serve warm.
