Cheesy French Onion Crockpot Potatoes

2 lbs baby potatoes (or fingerling potatoes), halved

1 large onion, thinly sliced

3 cups beef broth (or vegetable broth for a vegetarian option)

1 cup sour cream

1 cup shredded Gruyère cheese (plus extra for topping)

1 cup shredded mozzarella cheese

1 tbsp olive oil

2 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 tsp salt (adjust to taste)

½ tsp black pepper

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Rinse and halve the baby potatoes, then set aside.

    Sauté the Onions: In a skillet over medium heat, add the olive oil. Once hot, add the thinly sliced onions and sauté until they turn golden brown and caramelized (about 10-15 minutes). Stir occasionally to prevent burning.

      Combine Ingredients in the Crockpot: In the crockpot, add the halved potatoes, sautéed onions, beef broth, garlic powder, onion powder, dried thyme, salt, and pepper. Stir well to combine.

        Cook the Potatoes: Cover the crockpot and cook on high for 3-4 hours or on low for 6-8 hours, or until the potatoes are tender.
