4 medium russet potatoes

1 cup shredded cheddar cheese

1 cup chili (can be homemade or canned)

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup crispy bacon bits (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Wash the russet potatoes thoroughly and pat them dry. Prick each potato several times with a fork. Rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the Filling: Once the potatoes are cool enough to handle, cut each one in half lengthwise. Scoop out the insides into a mixing bowl, leaving a small border of potato skin. Mash the potatoes with a fork.

        Combine Ingredients: Mix the mashed potato with the chili, sour cream, garlic powder, onion powder, and half of the cheddar cheese. Season with salt and pepper to taste.

          Stuff the Potatoes: Spoon the cheesy chili mixture back into the potato skins, mounding on top. Sprinkle the remaining cheddar cheese over the stuffed potatoes.

            Bake Again: Place the stuffed potato halves on a baking sheet. Return them to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
