2 cups cooked rice (white or brown)

2 cups cooked and shredded chicken breast

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese

1 cup mozzarella cheese, shredded

1 can (10.5 oz) cream of chicken soup (or homemade)

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (or to taste)

1 teaspoon Dijon mustard (optional)

½ cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, blanch the florets in boiling water for about 2-3 minutes until vibrant green and slightly tender. Drain and set aside.

      Mix the Base: In a large mixing bowl, combine the cooked rice, shredded chicken, blanched broccoli, cream of chicken soup, milk, garlic powder, onion powder, black pepper, salt, and Dijon mustard (if using). Mix until well combined.

        Add the Cheese: Gently fold in half of the cheddar and mozzarella cheese into the mixture, reserving the other half for topping.

          Assemble the Casserole: Pour the combined mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Add Cheese and Breadcrumbs: Sprinkle the remaining cheddar and mozzarella cheese on top of the rice mixture. In a small bowl, mix breadcrumbs with olive oil or melted butter and sprinkle this over the cheese layer.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden, and the casserole is heated through.
