1 large head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust to taste)

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 1/2 cups shredded cheddar cheese (or a cheese blend)

1/2 cup sliced jalapeños (fresh or pickled, optional)

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, diced (for topping)

Sour cream or Greek yogurt (for serving)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper for easier cleanup.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, chili powder, salt, and pepper until all the florets are evenly coated.

      Bake the Cauliflower: Spread the seasoned cauliflower florets in a single layer on the prepared baking tray. Bake in the preheated oven for about 20-25 minutes, or until the cauliflower is tender and starting to brown, stirring halfway through.
