1 medium head of cauliflower (about 4 to 5 cups when riced)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup marinara sauce (for dipping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C), and line a baking sheet with parchment paper.

    Prepare the Cauliflower: Remove the leaves and stem from the cauliflower. Cut it into florets, and pulse in a food processor until it resembles rice or fine crumbs.

      Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl. Microwave on high for about 5-6 minutes, or until softened. Let it sit for a few minutes, then wrap in a clean kitchen towel and squeeze out excess moisture.

        Mix Ingredients: In a large bowl, combine the cooked cauliflower, shredded mozzarella, grated Parmesan, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.

          Shape the Dough: Transfer the cauliflower mixture to the prepared baking sheet. Using your hands or a spatula, spread it out into a rectangle about 1/2 inch thick.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center feels firm to the touch.

              Slice and Sprinkle: Remove from the oven, let it cool for a few minutes, and then slice it into breadstick shapes. You can sprinkle additional mozzarella cheese on top if desired, and pop it back in the oven for another 5 minutes for a cheesy finish.

                Serve: Garnish with fresh parsley and serve warm with marinara sauce for dipping.
