2 cups fresh broccoli florets (or frozen, thawed)

1 cup uncooked white or brown rice

2 cups vegetable broth (or chicken broth)

1 cup shredded cheddar cheese (divided)

1 cup cream of mushroom soup (canned or homemade)

1/2 cup finely chopped onion

1/2 cup milk (or substitute with plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon paprika (for a little heat)

Olive oil or butter for sautéing

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté the Onions: In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.

      Cook the Rice: Stir in the uncooked rice to the skillet with the onions and sauté for another minute. Pour in the vegetable (or chicken) broth, bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes, until the rice is tender and has absorbed most of the liquid.

        Prepare the Broccoli: While the rice is cooking, steam the broccoli florets until they are bright green and slightly tender, about 3-5 minutes. Set aside.

          Mix the Casserole Ingredients: In a large bowl, combine the cooked rice mixture, steamed broccoli, cream of mushroom soup, milk, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well combined.

            Bake the Casserole: Pour the mixture into a greased 9x13-inch baking dish. Spread it out evenly, then sprinkle the remaining cheddar cheese on top.

              Bake: Place the casserole in the preheated oven and bake uncovered for 15 minutes, or until the cheese is melted and bubbly.
