Cheesy Broccoli and Rice Casserole

2 cups of uncooked jasmine rice

4 cups of vegetable broth

4 cups of fresh broccoli florets

2 cups of shredded sharp cheddar cheese

1 cup of shredded mozzarella cheese

1 cup of cream of mushroom soup (or homemade equivalent)

1 cup of milk

1 small onion, diced

3 cloves of garlic, minced

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 teaspoon of paprika

Salt and pepper to taste

1 tablespoon of olive oil

½ cup of breadcrumbs (optional for topping)

2 tablespoons of butter (optional, for breadcrumbs if using)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the broth is absorbed. Fluff with a fork and set aside.

      Sauté Vegetables: In a large saucepan, heat olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, broccoli florets, cream of mushroom soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir until all ingredients are well incorporated. Fold in 1 cup of cheddar cheese and ½ cup of mozzarella.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Add Cheese and Breadcrumbs: Sprinkle the remaining cheddar and mozzarella cheeses on top. If using, melt the butter in a small skillet and mix with breadcrumbs; sprinkle evenly over the cheese layer.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                Cool and Serve: Remove the casserole from the oven and allow it to cool for about 5-10 minutes before serving. Garnish with fresh herbs like parsley or chives if desired for an extra pop of color and flavor.
