Cheesy Broccoli and Chicken Stuffed Shells

20 jumbo pasta shells

2 cups cooked chicken, shredded (rotisserie works great!)

1 cup broccoli florets, steamed and chopped

1 ½ cups ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a mixing bowl, combine the shredded chicken, chopped broccoli, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Shells: Take each cooked shell and carefully stuff it with about 2 tablespoons of the chicken and broccoli filling. Place the stuffed shells open-side up in a greased 9x13 inch baking dish.

          Add Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well-covered. Then sprinkle the remaining ½ cup of mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove from the oven and let stand for 5 minutes. Garnish with fresh basil leaves if desired, then serve warm.
