2 cups cooked chicken, shredded or diced

2 cups cooked rice (white or brown)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, blanch it in boiling water for 2-3 minutes, then quickly transfer it to an ice water bath to stop the cooking. Drain and set aside.

      Mix the Base: In a large mixing bowl, combine the cooked chicken, cooked rice, blanched broccoli, cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until well combined.

        Add Cheese: Fold in the cheddar and mozzarella cheese, reserving a little bit of both for topping later.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

            Prepare Topping: If desired, mix breadcrumbs with olive oil in a small bowl until the crumbs are coated. Sprinkle the reserved cheese and breadcrumb mixture evenly over the casserole.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.

                Cool & Serve: Allow the casserole to cool for about 5 minutes before serving to let it set a little. Serve warm and enjoy!
