1 lb ground beef

1 cup bell peppers, diced (mix of red, yellow, and green)

1 cup zucchini, diced

1 cup mushrooms, sliced

1 medium onion, chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup corn, frozen or fresh

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 cup beef broth

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until the onions are translucent (about 3-4 minutes). Add the ground beef, cook until browned, breaking it up with a spatula (about 5-7 minutes). Drain excess fat if necessary.

      Add Vegetables: Stir in the bell peppers, zucchini, mushrooms, corn, and cherry tomatoes. Cook for another 5 minutes until the vegetables start to soften.

        Season the Mixture: Add the smoked paprika, Italian seasoning, salt, and pepper. Stir to combine evenly.

          Incorporate Beef Broth: Pour in the beef broth, covering the mixture evenly. Let it simmer for about 3-4 minutes to absorb the flavors.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the mixture.
