1 lb ground beef

1 cup long-grain white rice

2 cups beef broth

1 (10 oz) can diced tomatoes with green chilies (drained)

1 cup shredded cheddar cheese

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup frozen peas and carrots mix

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Heat the skillet: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Brown the beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
