1 pound ground beef

1 cup uncooked long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes, with juice

1 can (15 oz) black beans, rinsed and drained

2 cups beef broth

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 cup sour cream

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.

      Sauté Veggies: Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté until the vegetables are softened, about 4-5 minutes.

        Combine Ingredients: Stir in the diced tomatoes (with juice), black beans, uncooked rice, beef broth, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing the rice to absorb some of the liquid.

          Add Cheese and Sour Cream: Remove the skillet from the heat. Stir in 1.5 cups of shredded cheddar cheese and the sour cream until well combined.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

              Top with Remaining Cheese: Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top.
