Ingredients

1 pound ground beef

2 cups broccoli florets (fresh or frozen)

1 cup cheddar cheese (shredded)

1 medium onion (diced)

2 cloves garlic (minced)

1 cup beef broth

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt to taste

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon cold water (if using cornstarch)

Cooked rice or quinoa (for serving)

Instructions

Cook the Ground Beef: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion. Cook until the onion is translucent (about 3-4 minutes). Add the ground beef, garlic, black pepper, garlic powder, onion powder, and a pinch of salt. Cook until the beef is browned and fully cooked, breaking it apart as it cooks (about 5-7 minutes). Drain excess fat if needed.

Add Broccoli and Liquid: Stir in the broccoli florets and pour the beef broth and soy sauce into the skillet. Bring the mixture to a simmer and cook for about 5-7 minutes or until the broccoli is tender.

Thicken the Mixture (Optional): If you want a thicker sauce, mix the cornstarch with cold water until smooth. Pour this mixture into the skillet and stir until the sauce thickens (about 1-2 minutes).

Add the Cheese: Lower the heat and sprinkle shredded cheddar cheese over the beef and broccoli mixture. Stir gently until the cheese melts and everything is beautifully coated (about 1-2 minutes).

Serve: Taste and adjust seasoning if necessary. Serve the cheesy beef and broccoli over cooked rice or quinoa for a satisfying meal.
