1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked brown rice

3 cups beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon pepper

1 teaspoon onion powder

½ teaspoon garlic powder

1 tablespoon olive oil

1 tablespoon soy sauce (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or a bit of olive oil.

    Cook the beef: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if needed.

      Combine ingredients: In the same skillet with the beef, add the uncooked brown rice, beef broth, broccoli florets, salt, pepper, onion powder, garlic powder, and soy sauce (if using). Stir to combine all the ingredients well.

        Transfer to baking dish: Pour the beef and rice mixture into the prepared baking dish, spreading it evenly.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and stir the casserole gently, then top it with both types of cheese.

            Finish baking: Return the casserole to the oven, uncovered, and bake for an additional 15-20 minutes until the cheese is melted and bubbly, and the rice is tender.

              Garnish and serve: Once done, remove from the oven and let it sit for about 5 minutes. Garnish with fresh parsley before serving.
