1 pound ground turkey or beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn

1 cup uncooked elbow macaroni

2 cups vegetable or chicken broth

1 can (10 oz) diced tomatoes with green chilies

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it into crumbles as it cooks (approximately 5-7 minutes). Drain any excess fat.

      Sauté Veggies: Add the diced onion, minced garlic, and diced bell pepper to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.
