2 cups day-old jasmine rice

4 oz assorted charcuterie (salami, prosciutto, and chorizo), chopped

1/2 cup sliced pepperoncini peppers

1/2 cup sun-dried tomatoes, chopped

1/2 cup shredded mozzarella cheese

1/4 cup sliced black olives

3 green onions, chopped

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon balsamic vinegar

2 cloves garlic, minced

2 large eggs, beaten

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Prepare Ingredients: Ensure your day-old jasmine rice is cold and clump-free. Chop all charcuterie, peppers, sun-dried tomatoes, olives, and green onions.

    Cooking Eggs: In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Stir in the minced garlic and sauté for about 30 seconds, until fragrant.

        Add Charcuterie: Introduce the chopped charcuterie to the skillet and sauté for about 2-3 minutes, allowing the flavors to meld and the meats to crisp slightly.

          Combine Veggies & Rice: Stir in the pepperoncini, sun-dried tomatoes, and olives. Cook for an additional 2 minutes, then add the day-old rice, breaking up any clumps. Mix everything well.

            Season & Mix: Pour the soy sauce and balsamic vinegar over the rice mix, stirring well to ensure an even distribution. Season with salt and pepper to taste.

              Final Assembly: Gently fold in the scrambled eggs and shredded mozzarella cheese, mixing just until the cheese starts to melt and becomes gooey. Taste and adjust seasoning if needed.

                Garnish & Serve: Remove from the heat and stir in the chopped green onions. Garnish with fresh parsley if desired. Serve hot, either on its own or as a delightful side dish.
