Before diving into the cooking process, it’s essential to prepare all your ingredients. This step is crucial for ensuring a smooth cooking experience, especially when making fried rice where timing is everything. Begin by chopping your charcuterie meats into bite-sized pieces. This could include salami, prosciutto, or any cured meats you prefer. Next, finely chop your vegetables such as bell peppers, carrots, and green onions. Prepare your eggs by whisking them in a bowl, and measure out your cooked rice—preferably leftover rice from the day before, as it helps prevent clumping due to its drier texture. Lastly, have your cheese ready to fold into the dish; shredded mozzarella or a sharp cheddar works beautifully.

Ingredients

2 cups cooked jasmine rice (preferably day-old)

1/2 cup diced salami

1/2 cup diced pepperoni

1/2 cup diced ham

1/2 cup cooked bacon, crumbled

1/4 cup diced provolone cheese

1/2 cup frozen peas and carrots mix

2 large eggs, lightly beaten

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon Dijon mustard

1 tablespoon chopped fresh parsley (for garnish)

Salt and pepper to taste

Optional: sliced green onions for garnish

Instructions

Prepare the Ingredients: Ensure all the meats (salami, pepperoni, ham, bacon) are diced into small, uniform pieces. If using fresh rice, cook it ahead of time and let it cool.

Heat the Pan: In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Meats: Add the diced salami, pepperoni, ham, and crumbled bacon to the pan. Cook for about 3-4 minutes, stirring often, until they are slightly crispy and heated through.

Add Veggies: Stir in the frozen peas and carrots, cooking for an additional 2-3 minutes until they are warmed and tender.

Scramble the Eggs: Push the meat and vegetable mixture to one side of the pan. Add the remaining tablespoon of olive oil to the empty side and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the meat mixture.

Incorporate the Rice: Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce and Dijon mustard, stirring everything together. Season with salt and pepper to taste.

Cheese It Up: Gently fold in the diced provolone cheese, allowing it to melt slightly into the fried rice. Mix well.

Final Touch: Remove the skillet from heat and garnish with chopped parsley and sliced green onions if desired.

Serve: Dish out generous portions of the charcuterie fried rice while it’s hot, and enjoy this unique twist on a classic dish!
