1 lb boneless, skinless chicken thighs, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup cherry tomatoes, halved

1/2 cup green olives, pitted and sliced

1/2 cup cooked, crumbled feta cheese

1/4 cup fresh basil, chopped

1/4 cup walnuts, roughly chopped or toasted

1/4 cup sliced cured meats (like salami or prosciutto)

1 tablespoon balsamic glaze for drizzling

Fresh arugula for garnish (optional)

Prepare the Chicken: In a bowl, mix diced chicken thighs with olive oil, smoked paprika, garlic powder, salt, and black pepper. Ensure the chicken is evenly coated with the spices.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken and cook for about 6-8 minutes, stirring occasionally until the chicken is browned and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add cherry tomatoes and green olives. Sauté for about 3-4 minutes until the tomatoes soften slightly. Stir in the cooked chicken back into the skillet.
