2 lbs beef (chuck roast or stew meat), cut into 1-inch cubes

3 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 green bell peppers, diced

2 medium tomatoes, diced

1 cup beef broth

1 cup water

2 teaspoons ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2-3 medium potatoes, peeled and diced (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sear the Meat: In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add them to the pot in batches, searing until browned on all sides. Remove the browned beef and set it aside.

    Sauté Vegetables: In the same pot, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and green bell peppers, cooking for an additional 2 minutes until fragrant.

      Combine Ingredients: Return the browned beef to the pot. Stir in the diced tomatoes, beef broth, and water. Sprinkle in the ground cumin, chili powder, smoked paprika, dried oregano, and bay leaf. Mix everything well.

        Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover tightly and let it simmer for about 1.5 to 2 hours, or until the meat is tender. If using potatoes, add them halfway through the cooking time. Stir occasionally and adjust the liquid as necessary, adding more water or broth if it seems too thick.

          Final Touches: Once the meat is fork-tender, taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaf before serving.

            Serve: Ladle the carne guisada into bowls, garnishing with fresh cilantro. Serve with lime wedges on the side to squeeze over the top. This dish pairs perfectly with rice, warm tortillas, or crusty bread.
