1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 tsp ground cinnamon

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

¼ cup sour cream

For the Apple Filling:

2 medium apples (e.g., Granny Smith), peeled and diced

¼ cup brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

1 tbsp unsalted butter

For the Caramel Topping:

1 cup caramel sauce (store-bought or homemade)

Instructions
 

Prepare the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until the crumbs are well coated.

        - Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden, then let it cool.

          Make the Apple Filling:

            - In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook until the apples have softened (about 5-7 minutes). Remove from heat and let cool.

              Prepare the Cheesecake Filling:

                - In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer on medium speed until smooth and creamy.

                  - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, cinnamon, and sour cream until fully combined.

                    Assemble the Cheesecake:

                      - Pour half of the cheesecake filling over the cooled crust, then layer all of the apple filling on top.

                        - Pour the remaining cheesecake filling over the apple layer, smoothing the top with a spatula.
