1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves

1/4 cup balsamic glaze

3 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

Salt and pepper to taste

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together olive oil, minced garlic, dried oregano, salt, and pepper. Add the chicken cubes and toss well to coat. Cover and let marinate for at least 30 minutes in the refrigerator, or up to 2 hours for more flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. While the chicken is marinating, prepare your cherry tomatoes and mozzarella balls.

      Assemble Skewers: After marinating, take the chicken out of the refrigerator. On each skewer, thread 1 chicken cube, followed by a basil leaf, a halved cherry tomato, and a mozzarella ball. Repeat until the skewer is filled, leaving space at the ends for handling.

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

          Grill the Skewers: Place the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F or 75°C) and has grill marks.

            Drizzle with Balsamic Glaze: Once cooked, remove the skewers from the grill and drizzle with balsamic glaze. Allow to rest for a minute.

              Serve: Serve the skewers warm, garnished with additional basil if you desire, alongside extra balsamic glaze for dipping.
